Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 cup raisins (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt; set aside.
Mixing
  1. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Stir in the oats and raisins (if using) until evenly distributed.
Baking
  1. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  3. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

For chewier cookies, slightly underbake them. You can also add chocolate chips or nuts for variation. Store in an airtight container at room temperature for up to 3-4 days.
