Parmesan Vinaigrette

Ingredients
  

Vinaigrette
  • ½ cup Parmesan cheese, grated
  • ¼ cup Red wine vinegar
  • ½ cup Olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove Garlic, minced
  • teaspoon Salt to taste
  • teaspoon Black pepper freshly ground, to taste

Method
 

Preparation
  1. In a medium bowl, combine the grated Parmesan cheese, red wine vinegar, Dijon mustard, and minced garlic.
  2. Gradually whisk in the olive oil until the vinaigrette is emulsified and smooth.
  3. Season the vinaigrette with salt and freshly ground black pepper to your taste; adjust as needed.

Notes

For best results, use freshly grated Parmesan cheese. The vinaigrette can be stored in an airtight container in the refrigerator for up to 5 days. Whisk well before serving.
