Preparation
- Preheat your oven to 375°F (190°C) and butter a 9x13 inch baking dish.
- In a large bowl, combine sliced peaches, sugar, flour, cinnamon, nutmeg, and lemon juice, then toss to coat the peaches.
- Pour the peach mixture into the prepared baking dish.
Make the Topping
- In a separate bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla extract until just combined to form a soft dough.
- Drop spoonfuls of the dough evenly over the peach filling.
Bake and Serve
- Bake for 40-45 minutes, or until the topping is golden brown and the peaches are bubbly.
- Let the cobbler cool slightly before serving; it's delicious served warm with a scoop of vanilla ice cream.
Notes
For extra flavor, sprinkle a little turbinado sugar on top of the cobbler topping before baking for a nice crunch.
