Ingredients
  

For the Peaches
  • 6 cups fresh peaches peeled, pitted, and sliced
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
For the Topping
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and butter a 9x13 inch baking dish.
  2. In a large bowl, combine sliced peaches, sugar, flour, cinnamon, nutmeg, and lemon juice, then toss to coat the peaches.
  3. Pour the peach mixture into the prepared baking dish.
Make the Topping
  1. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  2. Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Stir in the milk and vanilla extract until just combined to form a soft dough.
  4. Drop spoonfuls of the dough evenly over the peach filling.
Bake and Serve
  1. Bake for 40-45 minutes, or until the topping is golden brown and the peaches are bubbly.
  2. Let the cobbler cool slightly before serving; it's delicious served warm with a scoop of vanilla ice cream.

Notes

For extra flavor, sprinkle a little turbinado sugar on top of the cobbler topping before baking for a nice crunch.
