  • 8 ounces rotini pasta
  • 5 ounces fresh spinach
  • 15 ounces mandarin oranges (canned, drained)
  • 0.5 medium red onion thinly sliced
Dressing
  • 0.25 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Method
 

Pasta
  1. Cook rotini pasta according to package directions until al dente; drain well and rinse with cold water to stop cooking.
Salad Assembly
