  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.5 tsp Ground ginger
  • 0.5 tsp Salt
Wet Ingredients
  • 0.5 cup Unsalted butter softened
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar packed
  • 1 cup Pumpkin puree
  • 1 Large egg
  • 1 tsp Vanilla extract

Method
 

Preparation
  1. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt, then set aside the dry mixture.
  2. In a large bowl, cream the softened butter with granulated sugar and packed brown sugar until light and fluffy; then beat in the pumpkin puree, egg, and vanilla extract.
  3. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined and no flour streaks remain.
  4. Drop rounded tablespoons of dough onto a parchment-lined baking sheet and bake for 10-12 minutes, or until the edges appear set.
  5. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of flaky sea salt on top of the cookies before baking.
