  • 1 pint cherry tomatoes
Marinade

  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation
  1. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
  2. Add the cubed chicken breast to the marinade, ensuring all pieces are evenly coated; cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Assembly and Grilling
  1. Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).
  2. Thread the marinated chicken, bell pepper pieces, red onion pieces, and cherry tomatoes alternately onto the skewers.
  3. Grill the kabobs for 10-15 minutes, turning them occasionally, until the chicken is cooked through and the vegetables are tender-crisp.

Notes

For extra flavor, consider adding a dash of smoked paprika to the marinade. You can also experiment with different vegetables like zucchini or mushrooms.
