Cream Cheese Frosting
  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • 1 tbsp milk

Method
 

Brownie Bites
  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl.
  3. In a separate bowl, whisk melted butter and granulated sugar until smooth, then beat in eggs, vanilla extract, and red food coloring.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined; fold in white chocolate chips.
  5. Fill each mini muffin cup about two-thirds full with batter and bake for 12-15 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  6. Let the brownie bites cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Cream Cheese Frosting
  1. In a medium bowl, beat softened cream cheese and butter until light and fluffy.
  2. Gradually add powdered sugar and vanilla extract, beating until smooth, then add milk as needed to reach desired consistency.
  3. Pipe or spread the frosting onto the cooled red velvet brownie bites.
