Brownie Bites
- Preheat oven to 350°F (175°C) and grease a mini muffin tin.
- Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl.
- In a separate bowl, whisk melted butter and granulated sugar until smooth, then beat in eggs, vanilla extract, and red food coloring.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined; fold in white chocolate chips.
- Fill each mini muffin cup about two-thirds full with batter and bake for 12-15 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let the brownie bites cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Cream Cheese Frosting
- In a medium bowl, beat softened cream cheese and butter until light and fluffy.
- Gradually add powdered sugar and vanilla extract, beating until smooth, then add milk as needed to reach desired consistency.
- Pipe or spread the frosting onto the cooled red velvet brownie bites.
