Lemon Herb Grilled Chicken
- In a bowl, combine lemon juice, olive oil, oregano, thyme, garlic powder, salt, and pepper.
- Add chicken breasts to the marinade and ensure they are well coated. Marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
Teriyaki Grilled Chicken
- Whisk together teriyaki sauce, honey, grated ginger, and minced garlic in a separate bowl.
- Add chicken thighs, coating them evenly with the teriyaki marinade. Marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
Spicy BBQ Grilled Chicken
- In another bowl, mix BBQ sauce, cayenne pepper, paprika, and onion powder.
- Toss chicken drumsticks in the spicy BBQ sauce until fully coated. Marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
Grilling Instructions
- Preheat your grill to medium-high heat (about 375-400°F or 190-200°C). Lightly oil the grill grates to prevent sticking.
- Place the marinated chicken pieces on the hot grill. Cook chicken breasts for 6-8 minutes per side, thighs for 7-9 minutes per side, and drumsticks for 10-12 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Avoid moving the chicken too frequently to get good grill marks. During the last few minutes of cooking, you can brush with extra marinade or sauce if desired.
- Remove the grilled chicken from the heat and let it rest for 5 minutes before serving to allow the juices to redistribute.
Notes
For best results, marinate the chicken for at least 30 minutes, or up to 2 hours. Do not use marinade that has touched raw chicken as a finishing sauce without boiling it first. Adjust the spice level of the BBQ chicken to your liking by adding more or less cayenne pepper. Serve with your favorite summer sides like corn on the cob, a fresh salad, or grilled vegetables.
