Dough
  • 2.5 cups all-purpose flour
  • 1 cup warm milk
  • 2.25 teaspoons active dry yeast
  • 0.25 cup granulated sugar
  • 0.5 teaspoon salt
  • 0.25 cup unsalted butter, melted
  • 1 egg
Filling
  • 0.5 cup unsalted butter, softened
  • 0.5 cup brown sugar
  • 2 tablespoons ground cinnamon
Cream Cheese Frosting
  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon milk

Method
 

Dough Preparation
  1. In a large bowl, combine warm milk, yeast, and a pinch of sugar; let it sit for 5-10 minutes until foamy to activate the yeast.
  2. Add the remaining sugar, salt, melted butter, and egg to the yeast mixture and stir well.
  3. Gradually add the flour, mixing until a soft dough forms, then knead on a floured surface for 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
Assembly
  1. Punch down the risen dough, then roll it into a 12x18 inch rectangle on a lightly floured surface.
  2. Spread softened butter evenly over the dough, leaving a small border.
  3. In a small bowl, mix brown sugar and cinnamon, then sprinkle the mixture over the buttered dough.
  4. Starting from the long edge, tightly roll up the dough and pinch the seam to seal it.
  5. Cut the roll into 12 equal slices using a sharp knife or dental floss.
Baking
  1. Place the cinnamon roll slices in a greased 9x13 inch baking dish, cover, and let them rise again for 30 minutes.
  2. Preheat your oven to 375°F (190°C).
  3. Bake for 20-25 minutes, or until the rolls are golden brown and cooked through.
Frosting
  1. While the rolls are cooling slightly, beat softened cream cheese and butter together until smooth.
  2. Gradually add powdered sugar, vanilla extract, and milk, mixing until the frosting is smooth and creamy.
  3. Spread the frosting over the warm cinnamon rolls and serve immediately.

Notes

For extra fluffy rolls, ensure your yeast is fresh and your milk is at the correct temperature (105-115°F / 40-46°C). Do not overheat the milk as it will kill the yeast.
