  • 2 tbsp Vegetable Oil
  • 2 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 2 Green Onions chopped

Preparation
  1. Pat the shrimp dry with paper towels and season them with a pinch of salt and pepper.
  2. Prepare the beaten eggs and set aside, ensuring all other ingredients are ready for quick stir-frying.
Cooking
  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat, then add the seasoned shrimp and cook for 2-3 minutes per side until pink and opaque; remove shrimp and set aside.
  2. Add the remaining 1 tablespoon of vegetable oil to the skillet, then pour in the beaten eggs and scramble them until fully cooked, breaking them into small pieces; remove eggs and set aside.
  3. Add the minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.
  4. Add the day-old cooked rice to the skillet, breaking up any clumps, and stir-fry for 3-5 minutes until heated through and slightly crispy.
  5. Stir in the frozen peas and carrots, cooking for another 2-3 minutes until they are tender-crisp.
  6. Return the cooked shrimp and scrambled eggs to the skillet, then pour in the soy sauce and sesame oil and toss everything together to combine evenly.
  7. Garnish with chopped green onions and optional sesame seeds or chili flakes before serving immediately.

Notes

Using day-old rice is crucial for the best fried rice texture, as fresh rice can be too moist and lead to a clumpy result. Adjust the soy sauce to your taste, and feel free to add other vegetables like corn or bell peppers for variety.
