Preparation
- Grate the zucchini and squeeze out all excess liquid using a clean kitchen towel.
- In a large bowl, combine the grated zucchini, flour, egg, Parmesan cheese, salt, and pepper; mix well.
Cooking
- Heat vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve immediately.
Notes
For extra flavor, you can add a pinch of garlic powder or onion powder to the mixture. These fritters are best served warm, perhaps with a dollop of sour cream or Greek yogurt.
