- Season chicken breasts with 1 tablespoon of Cajun seasoning, salt, and pepper, then cook them in a large skillet with olive oil until browned and cooked through.
- Remove the cooked chicken from the skillet, dice it, and set it aside; meanwhile, cook the fettuccine according to package directions, then drain and set aside.
- In the same skillet, sauté garlic and diced red bell pepper until softened, about 3-5 minutes.
- Stir in the remaining 1 tablespoon of Cajun seasoning, heavy cream, chicken broth, and grated Parmesan cheese, bringing the mixture to a simmer and cooking until the sauce slightly thickens.
- Return the diced chicken and cooked fettuccine to the skillet, tossing everything to coat evenly with the creamy Cajun sauce, then serve immediately.
Notes
