Ingredients
  

Vegetables
  • 1 medium zucchini cut into 1-inch pieces
  • 2 bell peppers any color, cut into 1-inch pieces
  • 1 pint cherry tomatoes
  • 1 medium red onion cut into 1-inch pieces
  • 8 mushrooms whole or halved
Marinade
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together olive oil, balsamic vinegar, garlic powder, dried oregano, salt, and pepper to make the marinade.
  3. Add all the chopped vegetables to the bowl with the marinade and toss to coat evenly.
Assembling & Grilling
  1. Thread the marinated vegetables onto the skewers, alternating the different vegetables for a colorful presentation.
  2. Preheat your grill to medium-high heat.
  3. Grill the kabobs for 10-15 minutes, turning occasionally, until the vegetables are tender-crisp and slightly charred.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the marinade. These kabobs are also great served with a side of quinoa or couscous.
