Preparation
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, whisk together olive oil, balsamic vinegar, garlic powder, dried oregano, salt, and pepper to make the marinade.
- Add all the chopped vegetables to the bowl with the marinade and toss to coat evenly.
Assembling & Grilling
- Thread the marinated vegetables onto the skewers, alternating the different vegetables for a colorful presentation.
- Preheat your grill to medium-high heat.
- Grill the kabobs for 10-15 minutes, turning occasionally, until the vegetables are tender-crisp and slightly charred.
Notes
For extra flavor, you can add a pinch of red pepper flakes to the marinade. These kabobs are also great served with a side of quinoa or couscous.
