Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 13x9 inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt, then set aside.
Making the Pumpkin Bars
- In a large bowl, beat the eggs, granulated sugar, and vegetable oil until well combined.
- Stir in the canned pumpkin puree until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and smooth.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean; then let it cool completely on a wire rack.
Making the Cream Cheese Frosting
- In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating until smooth after each addition.
- Stir in the vanilla extract until fully incorporated and the frosting is light and fluffy.
- Once the pumpkin bars are completely cooled, spread the cream cheese frosting evenly over the top, then cut into squares and serve.
Notes
For an extra touch, sprinkle a pinch of ground cinnamon or nutmeg over the frosting before serving. These pumpkin bars are best stored in an airtight container in the refrigerator for up to 3-4 days.
