Preparation
- Slice the beef sirloin thinly against the grain and combine with soy sauce, cornstarch, and sesame oil in a bowl to marinate for at least 15 minutes.
- Prepare all your vegetables by cutting the broccoli into florets, julienning the carrots, slicing the bell pepper, mincing the garlic, and grating the ginger.
- Whisk together soy sauce, oyster sauce, brown sugar, rice vinegar, cornstarch, and water in a separate bowl to create the stir-fry sauce.
Cooking
- Heat vegetable oil in a large skillet or wok over high heat, then add the marinated beef and stir-fry until browned and cooked through, about 2-3 minutes; remove the beef and set aside.
- Add a little more oil if needed, then stir-fry the broccoli and carrots for 3-4 minutes until they are slightly tender-crisp.
- Add the bell pepper, minced garlic, and grated ginger to the skillet and stir-fry for another 1-2 minutes until fragrant.
- Return the cooked beef to the skillet and pour in the prepared sauce, stirring constantly until the sauce thickens and coats all the ingredients.
- Serve the beef stir fry immediately over rice or noodles.
Notes
For extra heat, add a pinch of red pepper flakes with the garlic and ginger. You can also customize the vegetables based on your preference, such as adding snow peas or mushrooms.
