  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1/4 cup water

Equipment

  • large skillet or wok
  • mixing bowls

Method

Preparation
  1. Slice the beef sirloin thinly against the grain and combine with soy sauce, cornstarch, and sesame oil in a bowl to marinate for at least 15 minutes.
  2. Prepare all your vegetables by cutting the broccoli into florets, julienning the carrots, slicing the bell pepper, mincing the garlic, and grating the ginger.
  3. Whisk together soy sauce, oyster sauce, brown sugar, rice vinegar, cornstarch, and water in a separate bowl to create the stir-fry sauce.
Cooking
  1. Heat vegetable oil in a large skillet or wok over high heat, then add the marinated beef and stir-fry until browned and cooked through, about 2-3 minutes; remove the beef and set aside.
  2. Add a little more oil if needed, then stir-fry the broccoli and carrots for 3-4 minutes until they are slightly tender-crisp.
  3. Add the bell pepper, minced garlic, and grated ginger to the skillet and stir-fry for another 1-2 minutes until fragrant.
  4. Return the cooked beef to the skillet and pour in the prepared sauce, stirring constantly until the sauce thickens and coats all the ingredients.
  5. Serve the beef stir fry immediately over rice or noodles.

Notes

For extra heat, add a pinch of red pepper flakes with the garlic and ginger. You can also customize the vegetables based on your preference, such as adding snow peas or mushrooms.
