Preparation
  1. Wash and trim the zucchinis, then roughly chop them into 1-inch pieces; you don't need to peel them.
  2. Heat olive oil in a large pot or Dutch oven over medium heat, then add the chopped onion and cook until softened, about 5 minutes.
Cooking the Soup
  1. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  2. Stir in the chopped zucchini and vegetable broth, bringing the mixture to a boil before reducing the heat and simmering for 15-20 minutes, or until the zucchini is very tender.
