Preparation
- Wash and trim the zucchinis, then roughly chop them into 1-inch pieces; you don't need to peel them.
- Heat olive oil in a large pot or Dutch oven over medium heat, then add the chopped onion and cook until softened, about 5 minutes.
Cooking the Soup
- Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
- Stir in the chopped zucchini and vegetable broth, bringing the mixture to a boil before reducing the heat and simmering for 15-20 minutes, or until the zucchini is very tender.
- Carefully transfer the hot soup to a blender or use an immersion blender to puree until smooth and creamy.
Finishing Touches
- Return the pureed soup to the pot, stir in the heavy cream, and season with salt and pepper to taste; heat through gently without boiling.
- Serve hot, garnished with fresh herbs or a drizzle of olive oil if desired.
Notes
For an extra touch of flavor, you can roast the zucchini before adding it to the soup. If you prefer a dairy-free option, use coconut milk or cashew cream instead of heavy cream.
