Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt; set aside.
Making the Dough
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, then stir in the molasses and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
Baking the Cookies
- Place the remaining 1/4 cup granulated sugar in a small bowl.
- Roll dough into 1.5-inch balls, then roll each ball in the sugar to coat evenly.
- Place the sugared dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are set and the centers are still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra chewiness, underbake the cookies slightly. These cookies store well in an airtight container at room temperature for up to 5 days.
