Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a 7-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and egg until light and fluffy.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined.
  5. Divide the batter evenly among the 7 muffin cups, filling each about two-thirds full.
  6. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean.
  7. Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, you can add a teaspoon of vanilla extract to the batter with the wet ingredients. Feel free to decorate with your favorite frosting once cooled.
