Preparation
- Slice chicken breasts into even strips and cut bell peppers and onion into thin slices.
- In a bowl, toss the chicken strips with 1 tablespoon of olive oil and the fajita seasoning until well coated.
Cooking
- Heat the remaining 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add the seasoned chicken to the skillet and cook for 5-7 minutes, or until browned and cooked through; remove from the skillet and set aside.
- Add the sliced bell peppers and onion to the same skillet, cooking for 5-8 minutes until they are tender-crisp.
- Return the cooked chicken to the skillet with the vegetables and toss to combine; heat thoroughly for 1-2 minutes.
- Warm the tortillas according to package directions, either in a microwave, oven, or dry skillet.
Serving
- Serve the chicken and vegetable mixture immediately with warm tortillas and your favorite toppings like lime wedges, sour cream, salsa, guacamole, and shredded cheese.
Notes
For extra flavor, marinate the chicken in fajita seasoning and a squeeze of lime juice for at least 30 minutes before cooking. Adjust the amount of fajita seasoning to your taste preference.
