Ingredients
  

For the Steak Marinade
  • 1 lb flank steak
  • 2 tbsp lime juice
  • 1 tsp chipotle powder
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil
For the Bowl
  • 2 cups cooked white rice
  • 1 can black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 0.5 cup salsa
  • 0.25 cup sour cream
  • 1 cup shredded lettuce
  • 0.5 cup shredded Monterey Jack cheese
  • 1 avocado sliced or diced
  • 2 tbsp fresh cilantro chopped
Garnish (Optional)

Method
 

Marinate the Steak
  1. In a bowl, combine lime juice, chipotle powder, cumin, garlic powder, smoked paprika, salt, and black pepper.
  2. Add the flank steak to the marinade, ensuring it is fully coated, and refrigerate for at least 30 minutes, or up to 4 hours.
Cook the Steak
  1. Heat olive oil in a large skillet or grill pan over medium-high heat.
  2. Sear the steak for 3-5 minutes per side for medium-rare, or until desired doneness is reached.
  3. Remove the steak from the pan, let it rest for 5 minutes, then slice against the grain into thin strips.
Assemble the Bowls
  1. Divide the cooked rice evenly among two serving bowls.
  2. Arrange the sliced steak over the rice, then add black beans, corn, salsa, sour cream, shredded lettuce, cheese, and avocado as desired.
  3. Garnish with fresh cilantro, lime wedges, and hot sauce if you wish, and serve immediately.

Notes

For extra flavor, you can grill the corn kernels before adding them to the bowl. Adjust spice level to your preference by adding more or less chipotle powder or hot sauce.
