  • ½ cup Unsalted butter softened
  • 3 cups Powdered sugar
  • 1 tsp Vanilla extract

Method
 

Pumpkin Bars
  1. Preheat oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, combine the wet ingredients: pumpkin puree, vegetable oil, eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth, avoiding overmixing.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean, then let cool completely.
Cream Cheese Frosting
  1. In a medium bowl, beat the softened cream cheese and butter with an electric mixer until light and fluffy.
  2. Gradually add the powdered sugar, one cup at a time, beating until smooth after each addition.
  3. Stir in the vanilla extract until well combined.
  4. Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top.
