Pumpkin Bars
- Preheat oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, combine the wet ingredients: pumpkin puree, vegetable oil, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth, avoiding overmixing.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean, then let cool completely.
Cream Cheese Frosting
- In a medium bowl, beat the softened cream cheese and butter with an electric mixer until light and fluffy.
- Gradually add the powdered sugar, one cup at a time, beating until smooth after each addition.
- Stir in the vanilla extract until well combined.
- Once the pumpkin bars are completely cool, spread the cream cheese frosting evenly over the top.
Notes
For an extra touch, sprinkle a pinch of cinnamon or nutmeg over the cream cheese frosting before serving. Ensure all ingredients are at room temperature for the best results when mixing the batter and frosting.
