Preparation
- Cook pasta according to package directions, then drain and set aside.
- While pasta cooks, pat the shrimp dry and season with salt and pepper.
Cooking the Scampi
- In a large skillet over medium heat, melt 2 tablespoons of butter with the olive oil.
- Add minced garlic and red pepper flakes (if using), cooking for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque; remove shrimp from the skillet and set aside.
- Pour in white wine or chicken broth, scraping up any browned bits from the bottom of the pan, and bring to a simmer.
- Stir in lemon juice and remaining 2 tablespoons of butter until fully melted.
- Return cooked shrimp to the skillet and toss to coat.
- Add the cooked pasta to the skillet and toss everything together.
- Garnish with fresh parsley and serve immediately.
