  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 0.5 cup dry white wine or chicken broth
  • 0.25 cup lemon juice
  • 0.25 cup fresh parsley, chopped
  • 0.5 tsp red pepper flakes (optional)
  • salt to taste
  • black pepper to taste
  • 8 oz linguine or your preferred pasta

Method
 

Preparation
  1. Cook pasta according to package directions, then drain and set aside.
  2. While pasta cooks, pat the shrimp dry and season with salt and pepper.
Cooking the Scampi
  1. In a large skillet over medium heat, melt 2 tablespoons of butter with the olive oil.
  2. Add minced garlic and red pepper flakes (if using), cooking for 1 minute until fragrant.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque; remove shrimp from the skillet and set aside.
  4. Pour in white wine or chicken broth, scraping up any browned bits from the bottom of the pan, and bring to a simmer.
  5. Stir in lemon juice and remaining 2 tablespoons of butter until fully melted.
  6. Return cooked shrimp to the skillet and toss to coat.
  7. Add the cooked pasta to the skillet and toss everything together.
  8. Garnish with fresh parsley and serve immediately.
