Meatballs
  • 1 lb ground beef
  • 1 egg
  • 0.5 cup breadcrumbs
  • 0.25 cup Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Soup
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 garlic minced
  • 1 can diced tomatoes
  • 6 cups beef broth
  • 0.5 cup small pasta
  • 3 cups fresh spinach
  • salt to taste
  • pepper to taste

Method
 

Make the Meatballs
  1. Combine all meatball ingredients in a large bowl and mix until just combined.
  2. Roll the mixture into 1-inch meatballs and set aside.
Prepare the Soup Base
  1. Heat olive oil in a large pot over medium heat, then add onion, carrots, and celery; cook until softened.
  2. Stir in minced garlic and cook for another minute until fragrant.
Simmer and Finish
  1. Add diced tomatoes and beef broth to the pot, bring to a boil, then reduce heat and simmer for 15 minutes.
  2. Add the meatballs and pasta, cooking until pasta is al dente and meatballs are cooked through.
  3. Stir in fresh spinach until wilted and season with salt and pepper to taste.

Notes

For extra flavor, you can brown the meatballs lightly before adding them to the soup. If you prefer a thicker soup, mash some of the cooked vegetables against the side of the pot.
