Cooking Steps
- Season the beef stew meat with salt and pepper, then sear it in a large pot or Dutch oven with olive oil until browned on all sides.
- Remove the beef and set aside, then add chopped onions to the pot and cook until softened.
- Stir in minced garlic and tomato paste, cooking for another minute until fragrant.
- Return the beef to the pot, then pour in beef broth and Worcestershire sauce, stirring to combine.
- Add carrots, potatoes, dried thyme, and a bay leaf to the pot, ensuring all ingredients are submerged in liquid.
- Bring the stew to a boil, then reduce heat, cover, and simmer for 2-3 hours, or until the beef is tender.
- Remove the bay leaf before serving, and adjust seasoning as needed.
Notes
For a thicker stew, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 30 minutes of cooking. You can also add other vegetables like peas or green beans during the last 30 minutes of cooking for added flavor and nutrients.
