Preparation
- Preheat oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan or two 9-inch round cake pans.
Mixing Dry Ingredients
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
Mixing Wet Ingredients
- In a separate bowl, beat the eggs, then stir in the vegetable oil and vanilla extract.
Combining Ingredients
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the grated carrots and nuts (if using).
Baking
- Pour the batter into the prepared pan(s) and bake for 30-35 minutes for round pans, or 35-40 minutes for a 9x13 inch pan, or until a toothpick inserted into the center comes out clean.
Cooling
- Let the cake cool in the pan(s) for 10 minutes before inverting onto a wire rack to cool completely.
Serving
- Frost with cream cheese frosting if desired and serve.
Notes
For an extra touch of flavor, add half a teaspoon of ground ginger or nutmeg to the dry ingredients. Ensure carrots are finely grated for a smoother cake texture. Do not overmix the batter, as this can result in a dense cake.
