Preparation
- Preheat your oven to 375°F (190°C) and grease and flour a 9-inch round baking pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt for the cake batter.
Wet Ingredients & Combine
- In a separate medium bowl, combine the milk, vegetable oil, and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
Streusel Topping & Assemble
- In a small bowl, combine the flour, brown sugar, and cinnamon for the streusel topping, then stir in the melted butter until crumbly.
- Pour half of the cake batter into the prepared pan, sprinkle half of the streusel topping over it, and then add the remaining cake batter and top with the rest of the streusel.
Bake
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the coffee cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For an extra touch, you can add a drizzle of glaze made from powdered sugar and milk after the cake has cooled. To keep the coffee cake fresh, store it in an airtight container at room temperature for up to 3 days.
