Method
 

Growing Microgreens
  1. Prepare your growing trays by adding a thin layer of potting mix, about 1-2 inches deep.
  2. Evenly sprinkle the cabbage, carrot, and radish microgreen seeds over the soil surface in separate sections or trays.
  3. Lightly cover the seeds with a thin layer of soil or vermiculite, then gently mist with water.
  4. Place the trays in a sunny location or under a grow light, maintaining consistent moisture.
  5. In 3-5 days, once the microgreens have developed their first true leaves, they are ready for harvest by snipping them just above the soil line.
Making the Coleslaw
  1. In a medium bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper to create the dressing.
  2. Gently add the freshly harvested microgreens to the dressing, tossing until they are evenly coated.
  3. For best flavor, refrigerate the coleslaw for at least 15 minutes before serving.

Notes

This method prioritizes speed by using microgreens, which are harvested young. For traditional full-sized cabbage, growing time would be much longer. Adjust dressing ingredients to taste. You can also add other microgreens like kale or broccoli for variety.
