Preparation
- Cut the chicken breasts into 1-inch cubes and place them in a bowl.
- In a separate small bowl, whisk together the lemon juice, olive oil, oregano, minced garlic, salt, and pepper to create the marinade.
- Pour the marinade over the chicken, ensuring all pieces are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
Cooking
- Preheat your grill to medium-high heat. If using wooden skewers, remember to soak them in water beforehand to prevent burning.
- Thread the marinated chicken onto the skewers, making sure not to overcrowd them.
- Grill the chicken skewers for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks.
Serving
- Remove the souvlaki from the grill and let it rest for a few minutes before serving.
- Serve the chicken souvlaki with warm pita bread, tzatziki sauce, and a fresh Greek salad for a complete and healthy meal.
Notes
For an extra burst of flavor, add a pinch of red pepper flakes to the marinade. You can also vary the vegetables grilled alongside the chicken, such as bell peppers or onions.
