Ingredients
  

Chicken Marinade
  • 1.5 lbs boneless, skinless chicken breasts
  • 0.25 cup lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Cut the chicken breasts into 1-inch cubes and place them in a bowl.
  2. In a separate small bowl, whisk together the lemon juice, olive oil, oregano, minced garlic, salt, and pepper to create the marinade.
  3. Pour the marinade over the chicken, ensuring all pieces are evenly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
Cooking
  1. Preheat your grill to medium-high heat. If using wooden skewers, remember to soak them in water beforehand to prevent burning.
  2. Thread the marinated chicken onto the skewers, making sure not to overcrowd them.
  3. Grill the chicken skewers for 3-4 minutes per side, or until the chicken is cooked through and has nice grill marks.
Serving
  1. Remove the souvlaki from the grill and let it rest for a few minutes before serving.
  2. Serve the chicken souvlaki with warm pita bread, tzatziki sauce, and a fresh Greek salad for a complete and healthy meal.

Notes

For an extra burst of flavor, add a pinch of red pepper flakes to the marinade. You can also vary the vegetables grilled alongside the chicken, such as bell peppers or onions.
