Cake Preparation
  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing and flouring them.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate medium bowl, combine the wet ingredients: buttermilk, vegetable oil, eggs, red food coloring, vinegar, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined and smooth.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Frosting Preparation & Assembly
  1. In a large bowl, beat softened cream cheese and butter with an electric mixer until light and fluffy.
  2. Gradually add powdered sugar, mixing until smooth, then stir in vanilla extract.
  3. Once the cakes are completely cool, frost generously between layers, on top, and around the sides.
