  • 2 medium ripe tomatoes
  • 1 medium green bell pepper
  • 1 small onion
  • 2 tbsp olive oil
  • 1/2 tsp red pepper flakes (optional)

  • 2 tbsp fresh parsley (for garnish)

Preparation
  1. Finely dice the onion and green bell pepper, and grate or finely dice the tomatoes.
Cooking
  1. Heat olive oil in a non-stick pan over medium heat, then sauté the onion until translucent.
  2. Add the green bell pepper and cook until it softens, about 5-7 minutes.
  3. Stir in the tomatoes and red pepper flakes (if using), then cook until the tomatoes break down and the sauce thickens, about 8-10 minutes.
  4. Create wells in the tomato mixture, crack an egg into each, and season with salt and pepper.
  5. Cover the pan and cook until the egg whites are set and the yolks are still runny, approximately 3-5 minutes.
  6. Garnish with fresh parsley before serving hot.

Notes

Menemen is traditionally served directly from the pan with fresh bread for dipping. Adjust the amount of red pepper flakes to your spice preference.
