Preparation
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Peel the sweet potatoes and cut them into 1-inch cubes. Boil the sweet potato cubes in salted water until very tender, about 15-20 minutes, then drain thoroughly.
Sweet Potato Layer
- Transfer the drained sweet potatoes to a large bowl and mash them until smooth. Add the melted butter, granulated sugar, 1/4 cup light brown sugar, eggs, milk, vanilla extract, and salt; mix until well combined.
- Spread the sweet potato mixture evenly into the prepared baking dish.
Pecan Streusel Topping
- In a medium bowl, combine the flour, 1/2 cup light brown sugar, chopped pecans, and ground cinnamon. Cut in the cold butter with a pastry blender or your fingertips until the mixture is crumbly.
- Evenly sprinkle the streusel topping over the sweet potato mixture in the baking dish.
Baking
- Bake for 30-35 minutes, or until the topping is golden brown and the sweet potato mixture is heated through and bubbly.
- Let the casserole cool for a few minutes before serving.
Notes
For an extra touch of sweetness, add a drizzle of maple syrup over the casserole just before serving. You can also toast the pecans before adding them to the streusel for a deeper flavor.
