  • 3 large sweet potatoes

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
Pecan Streusel Topping
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon

Preparation
  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Peel the sweet potatoes and cut them into 1-inch cubes. Boil the sweet potato cubes in salted water until very tender, about 15-20 minutes, then drain thoroughly.
Sweet Potato Layer
  1. Transfer the drained sweet potatoes to a large bowl and mash them until smooth. Add the melted butter, granulated sugar, 1/4 cup light brown sugar, eggs, milk, vanilla extract, and salt; mix until well combined.
  2. Spread the sweet potato mixture evenly into the prepared baking dish.
Pecan Streusel Topping
  1. In a medium bowl, combine the flour, 1/2 cup light brown sugar, chopped pecans, and ground cinnamon. Cut in the cold butter with a pastry blender or your fingertips until the mixture is crumbly.
  2. Evenly sprinkle the streusel topping over the sweet potato mixture in the baking dish.
Baking
  1. Bake for 30-35 minutes, or until the topping is golden brown and the sweet potato mixture is heated through and bubbly.
  2. Let the casserole cool for a few minutes before serving.
