Cooking Steps
- Season the thinly sliced beef sirloin with salt and pepper.
- In a large skillet, melt butter over medium-high heat. Sear the beef in batches until browned, then set aside.
- Add chopped onion to the skillet and sauté until softened, about 3-5 minutes.
- Stir in sliced cremini mushrooms and cook until they release their liquid and begin to brown, about 5-7 minutes.
- Sprinkle flour over the vegetables and stir for 1 minute to cook out the raw flour taste.
- Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pan to create a rich sauce.
- Bring the mixture to a simmer and cook until the sauce thickens, approximately 5 minutes.
- Reduce heat to low, then stir in Dijon mustard and the reserved beef.
- Remove the skillet from the heat and gently fold in the sour cream until just combined, being careful not to boil it.
- Taste and adjust seasonings as needed, then garnish with fresh chopped parsley before serving.
Notes
For best results, use good quality beef sirloin. Serve immediately over egg noodles or rice.
