  • 8 oz cremini mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Dijon mustard
  • 0.5 cup sour cream
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped for garnish

Cooking Steps
  1. Season the thinly sliced beef sirloin with salt and pepper.
  2. In a large skillet, melt butter over medium-high heat. Sear the beef in batches until browned, then set aside.
  3. Add chopped onion to the skillet and sauté until softened, about 3-5 minutes.
  4. Stir in sliced cremini mushrooms and cook until they release their liquid and begin to brown, about 5-7 minutes.
  5. Sprinkle flour over the vegetables and stir for 1 minute to cook out the raw flour taste.
  6. Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pan to create a rich sauce.
  7. Bring the mixture to a simmer and cook until the sauce thickens, approximately 5 minutes.
  8. Reduce heat to low, then stir in Dijon mustard and the reserved beef.
  9. Remove the skillet from the heat and gently fold in the sour cream until just combined, being careful not to boil it.
  10. Taste and adjust seasonings as needed, then garnish with fresh chopped parsley before serving.

Notes

For best results, use good quality beef sirloin. Serve immediately over egg noodles or rice.
