Preparation
- Preheat your oven to 400°F (200°C) and remove the giblets from the chicken, then pat the chicken dry with paper towels.
Seasoning
- In a small bowl, mix the melted butter with salt, pepper, garlic powder, and onion powder to create a seasoning rub.
- Generously rub the butter mixture all over the chicken, making sure to get under the skin of the breasts and thighs.
Roasting
- Place the rosemary sprigs and lemon halves inside the chicken cavity, then tie the legs together with kitchen twine.
- Place the chicken in a roasting pan and roast for 75-90 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Resting
- Once cooked, remove the chicken from the oven and let it rest, loosely covered with foil, for 10-15 minutes before carving and serving.
Notes
For extra crispy skin, try increasing the oven temperature to 425°F (220°C) for the last 15-20 minutes of cooking. You can also add chopped vegetables like carrots, potatoes, and onions to the roasting pan for a complete meal.
