Ingredients
  

For the Beef Filling
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 0.25 cup water
For Assembly
  • 12 corn or flour tortillas
  • 2 cups enchilada sauce
  • 2 cups Cheddar cheese, shredded

Method
 

Prepare the Beef Filling
  1. Brown the ground beef in a large skillet over medium heat, then drain any excess fat. Add the chopped onion and minced garlic, cooking until softened.
  2. Stir in the taco seasoning and water, bringing the mixture to a simmer. Reduce heat and cook for 5-7 minutes, allowing the liquid to absorb.
Assemble Enchiladas
  1. Preheat your oven to 375°F (190°C). Pour a small amount of enchilada sauce into the bottom of a 9x13 inch baking dish.
  2. Dip each tortilla quickly in the enchilada sauce to soften, then fill with the beef mixture. Roll up each tortilla and place seam-side down in the prepared baking dish.
  3. Pour the remaining enchilada sauce over the rolled enchiladas. Sprinkle generously with shredded Cheddar cheese.
Bake and Serve
  1. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through. Let stand for a few minutes before serving.
