Prepare the Beef Filling
- Brown the ground beef in a large skillet over medium heat, then drain any excess fat. Add the chopped onion and minced garlic, cooking until softened.
- Stir in the taco seasoning and water, bringing the mixture to a simmer. Reduce heat and cook for 5-7 minutes, allowing the liquid to absorb.
Assemble Enchiladas
- Preheat your oven to 375°F (190°C). Pour a small amount of enchilada sauce into the bottom of a 9x13 inch baking dish.
- Dip each tortilla quickly in the enchilada sauce to soften, then fill with the beef mixture. Roll up each tortilla and place seam-side down in the prepared baking dish.
- Pour the remaining enchilada sauce over the rolled enchiladas. Sprinkle generously with shredded Cheddar cheese.
Bake and Serve
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through. Let stand for a few minutes before serving.
