Preparation
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it.
- In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
- In a separate large bowl, mash the ripe bananas thoroughly until smooth.
Mixing and Baking
- Add granulated sugar, brown sugar, egg, melted butter, and vanilla extract to the mashed bananas and mix until just combined.
- Gradually incorporate the dry ingredients into the wet mixture, mixing only until moistened without overmixing.
- Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
- Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best results, use very ripe bananas with plenty of brown spots; this adds natural sweetness and moisture. Avoid overmixing the batter, which can lead to a tough loaf.
