- In a large pot or Dutch oven, sauté the chopped onion until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the cooked chicken, rinsed beans, chicken broth, green chilies, cumin, oregano, salt, and pepper.
- Bring to a simmer, then reduce heat and let it cook for at least 20 minutes to allow the flavors to meld.
- Just before serving, stir in the heavy cream and heat through, but do not boil.
- Serve hot and garnish with your favorite toppings such as shredded cheese, sour cream, or fresh cilantro.
Notes
For extra spice, add a pinch of cayenne pepper or a few dashes of hot sauce.
