  • 3 cups cooked chicken, shredded
  • 2 cans canned great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 1 can canned chopped green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream

Method
 

Instructions
  1. In a large pot or Dutch oven, sauté the chopped onion until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the cooked chicken, rinsed beans, chicken broth, green chilies, cumin, oregano, salt, and pepper.
  4. Bring to a simmer, then reduce heat and let it cook for at least 20 minutes to allow the flavors to meld.
  5. Just before serving, stir in the heavy cream and heat through, but do not boil.
  6. Serve hot and garnish with your favorite toppings such as shredded cheese, sour cream, or fresh cilantro.

Notes

For extra spice, add a pinch of cayenne pepper or a few dashes of hot sauce.
