  • 0.5 cup Quinoa cooked
  • 4 oz Chicken breast grilled and sliced
  • 0.5 Cucumber diced
  • 1 cup Cherry tomatoes halved
  • 0.25 cup Kalamata olives pitted and halved
  • 0.25 cup Feta cheese crumbled
  • 2 cups Mixed greens
Tahini Dressing
  • 2 tbsp Tahini
  • 1 tbsp Lemon juice
  • 2 tbsp Water
  • 1 clove Garlic minced
  • 0.25 tsp Salt
  • 0.125 tsp Black pepper

Method
 

Preparation
  1. First, prepare your quinoa according to package directions, then set it aside. While the quinoa cooks, rinse and drain your canned chickpeas.
  2. Next, grill and slice your chicken breast, ensuring it is cooked through. Dice the cucumber and halve the cherry tomatoes and Kalamata olives.
  3. Then, in a small bowl, whisk together the tahini, lemon juice, water, minced garlic, salt, and pepper to create your dressing. Adjust the consistency with more water if needed.
Assembly
  1. To assemble, start with a bed of mixed greens in your bowl. Top the greens with the cooked quinoa and the grilled chicken.
  2. Evenly distribute the chickpeas, diced cucumber, halved cherry tomatoes, and Kalamata olives over the bowl. Sprinkle the crumbled feta cheese on top.
  3. Finally, drizzle the tahini dressing generously over your Mediterranean bowl and serve immediately.

Notes

For a vegetarian option, omit the chicken and add extra chickpeas or a hard-boiled egg. Feel free to customize with other Mediterranean-inspired vegetables like bell peppers or red onion.
