Preparation
- Combine chopped rhubarb, sugar, and water in a medium saucepan. Cook over medium heat until rhubarb softens, about 10 minutes.
- In a small bowl, whisk cornstarch with 2 tablespoons of cold water until smooth. Stir into the rhubarb mixture.
- Bring to a simmer and cook, stirring, until thickened, about 5 minutes. Remove from heat and stir in vanilla extract.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for a delightful dessert. This recipe can be easily doubled for a larger crowd.
