  • 0.25 cup Fresh dill chopped

  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Red wine vinegar
  • 1 tsp Salt or to taste
  • 0.5 tsp Black pepper or to taste
  • 0.25 tsp Red pepper flakes optional, for a kick

Preparation
  1. Boil the diced potatoes in a large pot of salted water until tender, then drain and let them cool slightly.
  2. In a mixing bowl, combine the cooled potatoes with thinly sliced red onion, chopped parsley, and chopped dill.
  3. In a separate small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, black pepper, and red pepper flakes (if using) to create the dressing.
  4. Pour the dressing over the potato mixture and gently toss everything together until well combined.
  5. Taste and adjust seasonings as needed, then cover and refrigerate for at least 30 minutes before serving.

Notes

For best flavor, allow the salad to chill in the refrigerator for at least 30 minutes before serving.
