  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
Topping
  • 1/4 cup granulated sugar for rolling
  • 25 each chocolate kisses, unwrapped

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
Making the Cookies
  1. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the peanut butter until well combined, then add the egg and vanilla extract, mixing until just incorporated.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  4. Roll the dough into 1-inch balls, then roll each ball in the remaining granulated sugar.
  5. Place the sugared dough balls about 2 inches apart on the prepared baking sheets.
Baking
  1. Bake for 8-10 minutes, or until the edges are lightly golden and the centers are still soft.
  2. Immediately after removing from the oven, press one chocolate kiss into the center of each hot cookie.
  3. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

Ensure you have all ingredients at room temperature for best results. For extra chewiness, underbake slightly. Store in an airtight container at room temperature.
