Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
Mixing and Baking
- In a separate medium bowl, whisk together the melted butter, egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined; be careful not to overmix the batter.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 12-15 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Cooling
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra touch, you can add a pinch of cinnamon or nutmeg to the dry ingredients. These cookies are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
