Preparation
- Slice the onions thinly and melt the butter in a large pot or Dutch oven over medium heat.
- Add the sliced onions to the pot and cook slowly, stirring occasionally, until they are deeply caramelized and tender, about 30-40 minutes.
- Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom.
- Add the beef broth and fresh thyme to the pot, bring to a simmer, then reduce heat and let it cook for at least 15 minutes to allow the flavors to meld.
Serving
- While the soup simmers, slice the baguette into 1-inch thick rounds and toast them lightly.
- Preheat your broiler. Ladle the hot soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl of soup.
- Sprinkle a generous amount of grated Gruyere cheese over the baguette slices.
- Broil for 2-3 minutes, or until the cheese is melted, bubbly, and golden brown. Serve immediately.
Notes
For an extra rich flavor, you can add a splash of brandy or sherry with the wine. Adjust the amount of cheese to your preference. This soup tastes even better the next day!
