Ingredients
  

Salad
  • 2 heads romaine lettuce
  • 3 stalks green onions
  • 1/4 cup fresh dill
  • 1/2 cup feta cheese crumbled
Dressing
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • salt and pepper to taste

Method
 

Preparation
  1. Wash and thoroughly dry the romaine lettuce, then finely chop it and place it into a large salad bowl.
  2. Thinly slice the green onions and finely chop the fresh dill, then add both to the bowl with the lettuce.
  3. Crumble the feta cheese and evenly distribute it over the lettuce, green onions, and dill.
Dressing and Serving
  1. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, salt, and pepper until well combined.
  2. Pour the dressing over the salad ingredients and gently toss until everything is evenly coated.
  3. Serve immediately as a refreshing side dish.

Notes

For an extra tang, add a squeeze of fresh lemon juice to the dressing. You can also toast some pita bread and cut it into croutons for added crunch and flavor.
