  • 1 egg yolk
  • 0.5 tsp vanilla extract

  • 0.25 cup fruit jam

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg yolk and vanilla extract until well combined.
  4. Gradually add the flour, mixing until just combined and a soft dough forms.
Baking
  1. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  2. Using your thumb or the back of a spoon, make an indentation in the center of each cookie.
  3. Fill each indentation with a small amount of fruit jam.
  4. Bake for 10-12 minutes, or until the edges are lightly golden.
Cooling
  1. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
