  • 1 tsp garlic powder
  • 1/2 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped for garnish (optional)

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and cut potatoes into wedges, then pat them dry with a paper towel.
  3. In a large bowl, toss potato wedges with olive oil, garlic powder, Italian herbs, salt, and pepper until evenly coated.
Baking
  1. Spread the seasoned potato wedges in a single layer on the prepared baking sheet.
  2. Bake for 20-25 minutes, then flip the wedges and bake for another 10-15 minutes or until golden brown and crispy.
  3. Remove from oven, sprinkle with grated Parmesan cheese, and toss gently to coat.
Serving
  1. Garnish with fresh parsley, if desired, and serve immediately.

Notes

For extra crispiness, soak the cut potato wedges in cold water for 30 minutes before seasoning and baking. Make sure to pat them very dry before tossing with oil and spices.
