Ingredients

Cake
  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 3 large eggs
Tres Leches Mixture
  • 12 ounces evaporated milk
  • 14 ounces sweetened condensed milk
  • 1/2 cup heavy cream
Topping
  • 1/2 cup cookie butter, melted
  • whipped cream for serving optional

Equipment

  • 9x13 inch baking pan
  • Large mixing bowl
  • Whisk
  • Toothpick
  • Fork

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.
  2. Combine the cake mix, melted butter, milk, and eggs in a large bowl. Beat until the batter is smooth and well combined.
Baking the Cake
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
Tres Leches Soak
  1. While the cake cools, whisk together the evaporated milk, sweetened condensed milk, and heavy cream in a bowl.
  2. Once the cake is cool, use a fork to poke holes all over the top surface. Slowly pour the milk mixture evenly over the cake, allowing it to soak in.
Finishing Touches
  1. Once the milk mixture has been absorbed, drizzle the melted cookie butter generously over the cake.
  2. Chill the cake in the refrigerator for at least 2 hours before serving. Serve with a dollop of whipped cream, if desired.

Notes

For an extra touch, sprinkle some crushed Biscoff cookies on top of the cookie butter drizzle before chilling. Make sure the cake is completely cool before adding the milk mixture to prevent it from becoming soggy. You can prepare this cake a day in advance for better flavor and soak.
