Make the Pie Crust
- Combine flour, sugar, and salt in a large bowl, then cut in cold butter until pea-sized crumbs form.
- Gradually add ice water, mixing until the dough just comes together, then divide into two discs and chill for at least 30 minutes.
Prepare the Apple Filling
- In a large bowl, combine sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice; toss to coat evenly.
Assemble the Pie
- On a lightly floured surface, roll out one dough disc and carefully transfer it to a 9-inch pie plate.
- Pour the apple filling into the pie crust, dot with butter pieces, and then roll out the second dough disc to cover the top of the pie.
- Trim and crimp the edges to seal, cut several slits in the top for venting, then brush with egg wash and sprinkle with sugar.
Bake the Pie
- Preheat oven to 425°F (220°C) and bake for 15 minutes, then reduce heat to 375°F (190°C) and bake for another 35-45 minutes until golden brown and bubbly.
- Let the pie cool completely on a wire rack for at least 2-3 hours before slicing and serving to allow the filling to set.
Notes
For an extra flaky crust, ensure all your ingredients, especially the butter and water, are very cold. If the pie crust edges brown too quickly, cover them loosely with aluminum foil. Allowing the pie to cool completely is crucial for the filling to set properly, preventing a runny slice.
