For the Chicken & Vegetables
  • 1.5 lbs boneless, skinless chicken breasts
  • 2 bell peppers (any color), sliced
  • 1 red onion, sliced
  • 1 zucchini, chopped
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For Serving
  • 5 pita bread
  • 0.5 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 0.5 cup cucumber, diced
  • 2 tbsp fresh parsley, chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Cut the chicken breasts into 1-inch pieces and chop all the vegetables (bell peppers, red onion, and zucchini) into similar sizes.
Cooking
  1. In a large bowl, combine the chicken and vegetables with olive oil, oregano, garlic powder, paprika, salt, and pepper, tossing to coat everything evenly.
  2. Spread the seasoned chicken and vegetables in a single layer on the prepared baking sheet and roast for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  3. While the chicken and vegetables are roasting, warm the pita bread according to package instructions, either in the oven during the last few minutes of cooking or in a toaster.
Assembly
  1. Fill each warm pita with the roasted chicken and vegetable mixture, then generously drizzle with tzatziki sauce.
  2. Garnish with fresh cherry tomatoes, diced cucumber, and chopped fresh parsley before serving immediately.

Notes

For an extra kick, add a pinch of red pepper flakes to the chicken and vegetable mixture. You can also customize the vegetables based on what you have on hand, such as cherry tomatoes, mushrooms, or broccoli florets.
