Prepare Green Goddess Spread
- In a small bowl, combine mayonnaise, chopped fresh parsley and chives, lemon juice, Dijon mustard, garlic powder, a pinch of salt, and a pinch of black pepper.
- Stir all ingredients together until well combined and the spread is smooth.
Assemble the Sandwich
- Spread a generous amount of the Green Goddess spread on one side of each slice of bread.
- On one slice of bread, layer the sliced avocado, thinly sliced cucumber, mixed greens, and thinly sliced red onion.
- Place the other slice of bread on top, spread-side down, to complete the sandwich.
- Optionally, slice the sandwich in half and serve immediately.
Notes
Feel free to customize with other vegetables like sprouts or bell peppers for added crunch and flavor. For a richer flavor, toast the bread lightly before assembling.
