Ingredients
  

Sandwich
  • 2 slices thick-cut bread
  • 0.5 ripe avocado
  • 0.25 cup cucumber thinly sliced
  • 1 cup mixed greens
  • 1 tablespoon red onion thinly sliced
Green Goddess Spread
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 teaspoon lemon juice
  • 0.5 teaspoon Dijon mustard
  • 0.25 teaspoon garlic powder
  • pinch salt
  • pinch black pepper

Method
 

Prepare Green Goddess Spread
  1. In a small bowl, combine mayonnaise, chopped fresh parsley and chives, lemon juice, Dijon mustard, garlic powder, a pinch of salt, and a pinch of black pepper.
  2. Stir all ingredients together until well combined and the spread is smooth.
Assemble the Sandwich
  1. Spread a generous amount of the Green Goddess spread on one side of each slice of bread.
  2. On one slice of bread, layer the sliced avocado, thinly sliced cucumber, mixed greens, and thinly sliced red onion.
  3. Place the other slice of bread on top, spread-side down, to complete the sandwich.
  4. Optionally, slice the sandwich in half and serve immediately.

Notes

Feel free to customize with other vegetables like sprouts or bell peppers for added crunch and flavor. For a richer flavor, toast the bread lightly before assembling.
