Prep
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, diced carrots, and diced celery. Sauté for 5-7 minutes until the vegetables start to soften.
- Stir in minced garlic, dried thyme, and dried oregano. Cook for another minute until fragrant.
Cook
- Add diced potatoes, canned diced tomatoes (undrained), and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the rinsed and drained cannellini beans and frozen green beans. Cook for an additional 5 minutes, or until the green beans are tender-crisp.
- Finally, stir in the fresh spinach until it wilts. Season the stew with salt and black pepper to taste.
Serve
- Ladle the hot vegetable stew into bowls and serve immediately. Garnish with fresh herbs if desired.
Notes
This stew is even better the next day as the flavors meld. Feel free to substitute any of the vegetables with your favorites, such as zucchini, bell peppers, or corn. For a heartier meal, add some cooked quinoa or small pasta during the last 5 minutes of cooking.
